For the filling:
- 2 ¼ pounds (1 kg) apples peeled and sliced
- ½ cup (100 g) sugar
- 1 tsp cinnamon
- Juice of 1 lemon
- 2 tbsp cornstarch
- 1 packet vanilla sugar or 1 tsp vanilla extract
- ½ cup (80 g) raisins (optional)
For the topping:
- 1 egg beaten
- 1 tbsp milk
- Demerara sugar for sprinkling
Follow the steps outlined above to make the dough. Once prepared, divide it into two portions, wrap them in plastic wrap, and chill in the refrigerator for at least 30 minutes.
Peel, core, and slice the apples. Mix them with lemon juice, sugar, cinnamon, vanilla sugar, raisins (if using), and cornstarch. Let the mixture sit for 10 minutes to release juices. Strain the juices and set them aside for optional use.
Roll out the larger portion of dough and line the pie dish, ensuring it covers the bottom and sides evenly. Add the apple filling and spread it out evenly. Roll out the second portion of dough and use it to cover the filling, either as a whole crust with slits for ventilation or as decorative cutouts. Seal the edges by pressing them gently.
