- 12 oz chicken breast cut into cubes
- 2 medium onions about 9.5 oz (270 g), thinly sliced
- 7 oz green beans trimmed and halved
- 4 cloves garlic (finely chopped)
- 1 ¼ cups chicken broth
- 2 tbsp olive oil
- 1 tbsp butter
- Salt and pepper to taste
- ½ tsp smoked paprika (optional)
- Fresh parsley finely chopped, for garnish
Trim and halve the green beans. Boil them in salted water for 5–7 minutes until tender. Immediately transfer them to a bowl of ice water to stop cooking. This keeps them bright green and crisp. Drain and set aside.
Cut the chicken breast into cubes and season with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken until golden brown on all sides, about 5–6 minutes. Remove from the skillet and set aside.
In the same skillet, heat the remaining tablespoon of olive oil. Add the sliced onions and cook over medium-low heat for 5 minutes. Stir in 1 tablespoon of butter and continue cooking for another 5 minutes until the onions are golden, soft, and caramelized.
Stir in the garlic and cook for 30 seconds until fragrant. Add the blanched green beans, seared chicken cubes, and chicken broth to the skillet. Sprinkle with smoked paprika, if desired, and stir everything together.
Reduce the heat to low and let the mixture simmer for 8–10 minutes until the broth reduces slightly, coating the chicken and green beans.
Sprinkle with freshly chopped parsley for a bright, herby finish. Serve warm with your choice of rice, mashed potatoes, or crusty bread to soak up the savory broth.
