For the Stir-Fry:
- 8.8 oz (250 g) Shandon noodles
- 2 boneless skinless chicken breasts
- 1.8 oz (50 g) scallions cut into 2-inch pieces
- 5 oz (140 g) broccoli cut into bite-sized florets
- 3 cloves garlic, roughly chopped
- 2 dried chili peppers (optional)
- 2 tbsp neutral cooking oil
For the Sauce:
- 2 tbsp oyster sauce
- 2 tsp Shaoxing wine
- 1 tbsp brown sugar
For the Marinade:
- 2 tbsp oyster sauce
- 2 tsp Shaoxing wine
Start by scoring the chicken breasts with shallow cuts about ½ inch apart, no deeper than ⅓ inch. Mix the oyster sauce and Shaoxing wine in a small bowl, then coat the chicken thoroughly. Let it marinate for 20 minutes to soak up the flavors.
Cut the broccoli into bite-sized florets and the scallions into 2-inch pieces. Roughly chop the garlic cloves to release their bold flavor.
Heat 1 tablespoon of oil in a large skillet over medium-high heat until shimmering. Add the chicken and cook undisturbed for about 3 minutes per side. This will give the chicken a lightly charred, smoky crust. Once done, remove the chicken from the pan and let it rest.
Bring a pot of salted water to a boil. Add the Shandon noodles and broccoli florets, cooking them together for about 2 minutes. Drain the water, reserving a couple of tablespoons for the stir-fry.
In the same skillet, heat the remaining oil. Add the garlic, white parts of the scallions, and chili peppers if using. Stir-fry quickly for about 15 seconds until fragrant. Add the noodles and broccoli, along with the reserved cooking water and sauce. Toss everything together and stir-fry for 2 minutes until evenly coated.
Slice the chicken into strips and place it over the stir-fried noodles and broccoli. Garnish with the green parts of the scallions and fresh cilantro. Serve immediately while it’s hot, and enjoy!
