  • Cream cheese to taste
  • 3.5 oz (100 g) smoked salmon
  • ½ avocado sliced
  • A few slices of fresh cucumber
  • 3 cherry tomatoes sliced
  • 4 black olives sliced
  • A handful of fresh arugula
  • 2 large eggs
  • 3 tbsp mayonnaise
  • 3 tbsp ketchup
  • Freshly chopped chives for garnish
  • salt and pepper to taste

Instructions
 

  • Toast the bread until golden-brown and crispy.
  • In a small bowl, mix mayonnaise and ketchup to create a creamy sauce.
  • Spread cream cheese on the toast, layer with smoked salmon, and drizzle a few teaspoons of the sauce.
  • Top with cucumber, avocado, cherry tomatoes, olives, and arugula.
  • Fry the eggs sunny-side-up and place one on each toast. Garnish with chives and season with pepper.
  • Serve immediately with an optional squeeze of lemon for extra freshness.
