  • 1 ⅓ lbs ground beef (80/20 blend)
  • 1 tbsp olive oil
  • ½ small red onion finely chopped
  • 2 garlic cloves minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 7 oz canned diced tomatoes drained slightly

Mexican-Style Black Beans

  • 1 ½ cup canned black beans drained and rinsed
  • 1 tsp olive oil
  • ½ garlic clove minced
  • ¼ tsp salt
  • 3 tbsp water

Cilantro Lime Rice

  • 1 cup basmati or long-grain white rice
  • 1 ½ cups water
  • ½ tsp salt
  • 1 tbsp lime juice
  • 1 tbsp fresh cilantro chopped (optional)

Creamy Burrito Sauce

  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 tbsp lime juice
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp salt
  • ½ - 1 tsp hot sauce optional

The Final Touch – Assembly & Wrap

  • 8 large flour tortillas
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Instructions
 

Cook the Cilantro Lime Rice

  • Run cold water over the rice until the water runs clear to remove excess starch and prevent a gummy texture.
  • In a medium pot, add the rice, water, and salt.
  • Place the pot over medium-high heat and let it reach a rolling boil.
  • Reduce heat to low, cover, and cook until all the water is absorbed.
  • Remove from heat, let sit for a few minutes, then fluff with a fork and stir in fresh lime juice and chopped cilantro.

Sauté the Ground Beef

  • Heat olive oil in a large skillet over medium heat. Add chopped red onion and cook until softened.
  • Add minced garlic and ground beef, breaking it up with a spatula. Stir occasionally until fully browned.
  • Stir in cumin, smoked paprika, oregano, salt, and black pepper, mixing well to coat the beef evenly.
  • Pour in the diced tomatoes, reduce heat, and let simmer until the sauce thickens.

Prepare the Mexican Black Beans

  • Heat olive oil in a small pan over medium heat. Add minced garlic and cook until fragrant.
  • Stir in the black beans, salt, and water, mixing to combine.
  • Cook for a few minutes, stirring occasionally, until the beans are warmed through and slightly softened.

Whisk the Creamy Burrito Sauce

  • In a bowl, whisk together sour cream, mayonnaise, lime juice, smoked paprika, cumin, garlic powder, onion powder, salt, and hot sauce.
  • Cover and refrigerate for at least 10 minutes to allow the flavors to meld.

Assemble the Burritos

  • Heat in a dry skillet or microwave to make them more pliable and prevent cracking.
  • Place a tortilla on a flat surface and layer the fillings in the center, starting with the seasoned beef, followed by cilantro lime rice, black beans, creamy burrito sauce, and shredded cheese.
  • Fold in the sides, then roll the burrito tightly from the bottom up, tucking as you go.
  • Place the burrito seam-side down in a dry skillet over medium heat and toast until golden brown.
  • Serve with extra creamy sauce, guacamole, and salsa on the side. Add a drizzle of hot sauce for extra heat. Pair with crispy tortilla chips or a side of Mexican street corn.

Notes

Prevent rice from getting mushy – Rinse it well and cook it covered on low heat until all the water is absorbed.
For flavorful beef – Simmer with tomatoes until the sauce thickens; don’t rush this step.
Assemble smartly – Layer fillings in the right order to keep the tortilla from getting soggy and ensure even distribution.
Customize to taste – Add salsa and guacamole inside the burrito for extra freshness and flavor.
